Smoked Brisket Nachos

Ingredients

  1. Tortilla Chips (1 Bag)
  2. 3 cups shredded ZFF beef brisket (leftover or freshly smoked)
  3. 1/ cup BBQ sauce
  4. 2 cups shredded cheddar cheese
  5. 1 green pepper - chopped
  6. 1/2 red onion - chopped
  7. 1 cup pinto beans
  8. 2 green onions - chopped

Optional Toppings

  • guacamole
  • salsa
  • sour cream
  • pico de gallo
  • chopped cilantro
  • sliced jalapeno 
  • tomatoes 

Instructions

  1. Preheat oven to 250 degrees fahrenheit
  2. Spread a layer of tortilla chips out on a sheet pan - avoiding stacking them
  3. Top chips in this order: 
    1. Half of the shredded brisket
    2. Half of the BBQ sauce
    3. Half of the shredded cheese
    4. Half of the green pepper
    5. Half of the red onion
    6. Half of the pinto beans
  4. Then top with another layer of chips, and repeat step #3
  5. Transfer to the smoker. Close the lid and cook for 25-30 minutes or until the cheese is melted. 
  6. Remove from the smoker and top with chopped green onions and any additional toppings of your choice.
  7. Serve immediately
